It's day one...first on the scale. Jim is starting off at 251.4 lbs this morning, which is a couple of pounds higher than lately...could be because Katie and I had a couple of "last suppers" this weekend. My blood sugar was 14.4 which is about 5 points higher than normal in the morning. This is definitely Type 2 range. A few years ago, I got up to my highest weight ever which was 271 pounds, and discovered that I had Type 2 Diabetes. I had to take Metformin 3 times a day, but I started to lose weight and went for lots of walks. I actually managed to get down to 239 at one point, and also managed to get rid of the medication and my insulin readings were very good. Type 2 seems to run in my family as does hypertension.
This last March, when we went to our mobile home in Texas and did our usual 3 day travel there, spent a month, and 3 days back, Katie and I both gained close to 10 pounds. Why? because we ate whatever we wanted and whatever was around. Seems like when we're away, most thoughts of eating properly go out the window.
So all the more reason we are doing what we're doing. We won't divulge Katie's weight now...only how much she and I are losing day to day and week to week. I will also let you know how I am doing with my sugar levels.
This is breakfast, which is oatmeal with Soya milk and walnuts and a side of vitamins...
This is lunch....you can eat as much salad and fruit as you wish around a pound of salad a day
We made dressing from the book, but are not totally sold on it...so for today having "Eating Right" poppyseed and carmalized onion.
Oh...by the by....blood sugar back down to reasonable levels...7.4
Yesssss! Time for supper! Katie made enough of this vegetable soup to last the whole week. This is so strange....when I was a kid I wouldn't eat a vegetable if it was covered in chocolate.
This was quite good...so no problem eating it again
Then we had some chili...lots of beans...used to hate beans
still not so crazy about the consistency, but will eat them
anyway because Katie makes them taste good.
more later....

About Us
- Jim
- Pharr, Texas, United States
- Every Year for the past few years, Katie and I journey to Pharr, Texas, where we have a mobile home in Paradise Park. We also sponsor three girls in Nuevo Progeso, Mexico, so they can go to school. We travel to Mexico to see the kids, with Sr. Maureen Crosby who runs the program and our friends Ken and Vickey, who are Sr. Maureen's constant helpers. Starting last year we also go by ourselves several times
Welcome to our Blog
Some history....Katie and I quit smoking way back when, about 20 years ago, and we've never been the same since. We both gained a lot of weight and basically it has been with us ever since. You might ask yourself...well what have you done about it?...oh nothing!...just kidding....how about a variety of different eating plans, diets, exercise routines including a personal trainer for awhile.
What was the result of all this...well times of success but ultimate failure. Why? because we always revert to bad habits and bad eating We do all the things that most overweight people do, we eat when we're not really hungry, we eat too much, we eat the wrong things, we eat to feel better, we eat to fulfill our cravings.
Sad part is, that when we had the trainer, we got stronger, lost some weight felt better. When he was no longer in a position to train us, we thought that's ok we can do it on our own...WRONG!
We became Vegans for 4 months...it started off as a one month experiment and we found it so easy that we continued for 4 months. You can read that account here

We were good at it thanks to Katie's ability to make anything taste good, we lost weight and felt better. I also turned it into a bit of an entertainment blog so people wouldn't get too bored. We took pictures of virtually every meal and described things.
What happened? Well at the four month mark, we thought we would just add a few things a little at a time...oops the little things became big things...and the first long trip we took to Texas for a month, we reverted right back to our old bad eating habits. It's hard to travel and eat properly and it's hard when you're in a community setting with friends and happy hours to not indulge.
So now, we're decided enough is enough!!!!! So tomorrow we are starting a new phase in our lives which involves a concept called "Eat to Live" Eat to live is the title of a book, and way of eating which has been the life work of Dr. Joel Fuhrman. He has been on PBS, Dr. Oz, and is well published.
Rather than explain exactly what and how we'll be doing what we're doing, we will show and explain as we go along from day to day, and explain the results as we go along.
Hope you will enjoy and learn as we intend to do.
